I don’t eat a lot of meat at home because I tend to somehow manage to over cook it. I was at the grocery store the other day and saw pot roast. I bet in a crockpot that would be hard to mess up. So I marinate the meat over night and put it in the crock pot on low at 8 am this morning. I check it at 11 am, a whole three hours later, and it is over cooked. How did that happen? I’m the only person I know who can ruin a meal in a crockpot.
I’m so depressed.

When you say overcooked, do you mean burned? Maybe you didn’t have enough liquid in the crockpot? On low, a pot roast should take all day to cook; 6-8 hrs is normal in recipes. Marinating can chemically “cook” meat, too, depending on what’s in it, so maybe the marinade is at fault.
It wasn’t burned. I think it may be the marinade. Lesson learned
I have done that too. Please don’t be depressed. I have ruined many a roast over cooking…it also depends on how hot your crock pot gets too.
If you’re cooking for several hours, make sure to use the lower setting. And I echo the liquid thing. I’ve also overcooked in the crock pot.
